Skinny Chili

paleonewbie-paleo-chili-bowl-1266x850-e1420339993940Eat yourself skinny with this award-winning chili! As you can see from the video below, filmed at a chili cook-off contest, this recipe was the first to be finished off and the only one to be completely cleaned out by the time the night was over. It’s a clear crowd favorite, even among “normal” eaters, who follow the Standard American Diet (SAD).

Ingredients:

  • 2 lbs. of ground beef or turkey
  • 1 and 1/2 onion, diced
  • 6 tbsp of garlic, minced
  • 1 red and 1 green bell pepper, both diced
  • 1 cup of carrots, finely diced
  • 2 cups of celery, diced
  • 2 jalapenos, minced
  • (1) 28-ounce can of crushed or stewed tomatoes
  • (1) 14-ounce can of diced tomatoes
  • (1) 15-ounce can of tomato sauce
Spices
  • 3 Tbsp. of chili powder
  • 4 Tbsp. of oregano
  • 4 Tbsp. of basil
  • 4 Tbsp. of cumin
  • 4 Tbsp. cinnamon
  • 4 Tbsp. cacao powder (optional, if you want a less sweet and darker taste)
  • 1 Tbsp. of salt
  • 1 Tbsp. pepper
  • 4 Tbsp. onion powder
  • 1 tsp. of cayenne

Instructions: 

Dump it all in a crockpot and cook on low for 8-10 hours, stirring at least once, at some point, after the 4 hour mark. How easy is that?
