There are several pancake recipes on this site, but this recipe, created by Beege, is Peege’s current fav!
- 2 Tablespoons arrowroot powder
- 1/8 cup almond flour
- 1/4 cup coconut flour
- Pinch of salt
- 1/2 teaspoon baking soda
- 2 eggs room temperature
- 1 Tablespoon vanilla extract
- 1/4 cup melted Kerrygold butter
- 1 Tablespoon Natures Hollow maple syrup
- 2 Tablespoon coconut oil
- 1 Tablespoon stevia glycerite
- 1/4 cup coconut milk
Wisk together in a bowl.
- Pour 3+ tablespoons (depending on your size preference) into non-stick pan on medium heat.
- Cook until brown underneath and flip over. Then cook that side until brown underneath.
- Top with Kerrygold butter, Nature’s Hollow maple syrup, or XyloBurst jam and enjoy!
