Jen Hendershott’s Turkey Meatloaf

Ingredients:

  • 1 tsp chicken instant bouillon
  • 1/2 cup salsa (max 1 carb per spoonful)
  • 1.5 lbs. lean ground turkey breast
  • 3/4 cup quinoa
  • 1/2 cup onion, chopped
  • 2 tsp basil
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper (or lemon pepper)
  • 2 egg whites

Instructions:

  1. Preheat oven to 350 degrees.
  2. Mix ingredients together.
  3. Pack into 8X4″ loaf pan.
  4. Cook for one hour.
  5. Let stand for 10 minutes.
  6. Serve with salsa (3 tablespoons per slice)or Tiger Sauce (1 tbsp per slice) for an extra kick .
  7. Each slice will be about 1.5 inches thick.

Makes 6 servings.
