Eggs Benedict-O!

Ingredients:

  • 2 eggs
  • 2 slices beefsteak tomatoes
  • 1 tbsp avocado mayo
  • 1 tbsp pesto sauce
  • 2 slices pepper jack cheese
  • 2 pats of butter

Instructions:

Cook the eggs (I prefer sunny side up with yolks slightly runny), mix the Vegenaise with the pesto to make the sauce, then put it on the tomato slices, then the egg on top of that and then the cheese on top of that.

Nutrient Breakdown:

  • Each serving has 168calories
  • Fat: 14 grams
  • Carbs (net): 1.5 grams
  • Protein: 9 grams

Makes 2 servings.
