Wilster’s Mock Smashed Potatoes

Ingredients:

  • 1 medium head of cauliflower
  • 3 tbsp Quark (Metropolitan Market) or sour cream
  • 1/2 tbsp minced garlic
  • 1/8 tbsp salt
  • 1/8 tbsp pepper

Instructions:

  1. Cut the cauliflower into small pieces and boil it for 7 minutes.  Drain well and dump (while still warm) into food processor or blender
  2. Add other ingredients and puree until almost smooth.

Makes 4 big servings!

  • Each serving has 22 calories
  • Fat: 0
  • Carbs (net): 2 grams
  • Protein: 3 grams
