Super easy to prepare and one of PJ’s favorite snacks on the go!
- 8 large carrots (approximately 4 cups worth)
- 1 cups guacamole
- Wash carrots, remove stems, and cut carrots horizontally into 1/4″ circular chips (if you have a mandolin slicer that can do 1/8″-1/4″ cuts this may be easier than using a knife, especially for larger batches).
Serving size = 1 cup of carrot chips with 1/4 cup guacamole. Makes approximately 4 servings.
